Three things are true at once here, and dropping any one of them produces one of the two wrong answers in circulation. That no version has been announced is confirmed. That no version is coming is not confirmed, because nobody with the authority to say it has said it. And the publisher has gone on the record refusing to commit either way.
Will it ever come to Switch 2?

A Nintendo machine has never appeared on a Rockstar or Take-Two platform list for this game — not in the pre-order announcement, not on the storefront listings, not in an earnings release. Neither has PC, which is worth holding on to: absence from the list is a weaker signal than it looks, because the list is short and one obvious platform is missing from it too.

Strauss Zelnick said Take-Two would support Switch 2 generally but decides platforms "on a case-by-case basis" and "would not necessarily bring every title to every platform". Confirmed. Forbes, .
Read that once more: the publisher will support the console, and will decide title by title. That is a company keeping an option open. Headlines compressed it to a pledge of Switch 2 support, and readers finished the sentence with the game they cared about. It is the second of the two confirmed entries on this page, and it is a refusal to commit rather than a commitment.
Both camps are arguing about a build they have not run
Reports that Rockstar has run internal Switch 2 tests are second-hand and unconfirmed. Rumoured. GameSpot, .
That is the whole of it: a report, relayed at one remove, that internal testing has taken place — with no named source inside Rockstar, no document, and no confirmation from Rockstar, Take-Two or Nintendo. Internal testing on a platform is also, on its own, weak evidence of a release: studios evaluate hardware they never ship on, and evaluation leaves the same trace as a shipping port. It is recorded here because it is repeated everywhere, not because it establishes anything.

Where the hardware argument runs out
The "it is technically impossible" camp is as unsupported as the "tests prove it is coming" camp, and for a related reason: there is nothing published to argue from. No target frame rate, no resolution, no performance modes — for the two machines the game has been announced for.

Analysts doubting a 60fps mode on a PS5 Pro tells you the game is demanding. It does not tell you what a scaled-down version on other hardware could or could not do. That is a question about engineering decisions nobody outside Rockstar has seen, and with no figures published for the announced machines there is nothing for a Switch 2 figure to fall short of. Rockstar's history with Nintendo hardware
The argument usually reached for here is a list of past Rockstar releases on Nintendo consoles, presented as a pattern. No dated, sourced version of that list has been established, so there is no pattern to present.
It would not decide the question in any case. A publisher that shipped on every previous Nintendo machine could still skip this one, and a publisher that skipped them all could still ship this one. Precedent describes what happened; it does not report what is happening.
Until something is said, the answer is that nobody outside the companies involved knows, and the people telling you otherwise — in either direction — are telling you what they expect rather than what has been said.
